Count your blessings...

name them one by one. Here, let me help you get started:
1. running water
2. hot water
3. central heating & air
4. your car
5. paved roads
6. dishwasher
7. washer
8. dryer
These are all things that we either do not have here or do not have consistently. You know how I said they turned the water off at around 7:00 PM last night? Well, Ryan went to try to take a shower before class this morning and the water STILL was not on! There were a bunch of locals bathing in the muddy river (sometimes a creek) outside our apartments. Since today is our laundry day, we were worried that we would get skipped this week. They came and picked up our laundry and then I was worried that all of our stuff would be brown because when they first turn the water back on it is really muddy. They turned the water on at about 7:45 and I was so excited. I flushed the toilets and brushed my teeth. When I was ready to take a shower they had already turned the water back off! Ryan came home for lunch and they turned the water back on permanently at around 11:45. That would be about 17 hours with no water. So Ryan wanted to jump in the shower before he went back to school. They have still not turned our hot water on. I could hear him screaming from the freezing cold shower. It is now about 10:45 and I have not showered because there is still no hot water. Ughhh!!! I would not have made it too well if I lived during the biblical times.
I have really been wanting to make lasagna for a couple of weeks. The one ingredient I cannot find is ricotta cheese. Tonight I decided to make ricotta myself. Did you know that all you need to make it is milk, lemon juice and salt? I didn't have a cheese cloth (obviously, not many girls need a cheese cloth these days) so I used paper towels as the filter. It looked like normal ricotta. I'll let you know how it tastes tomorrow night. I went ahead and made the lasagna and put it in the fridge for tomorrow night's dinner. I am going to Roseau tomorrow with several other girls. I don't really need to shop that much so I'm just going to socialize.
Today was maid day. I was really nervous because I forgot to drag the rug back out. She didn't comment on it. We had a little chicken left from lunch and so I gave it to the maid, along with a rice crispy treat. She was so excited and said "Thank you. Love you, baby.". What do you say? So I said "love you, too. Thanks for doing such a good job cleaning our apartment.". Told you we were best friends.
I better go. It's almost 11:00 and Ryan will be on that 11:00 bus! =)
